Ingredients
Scale
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons light brown sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
Wet Ingredients
- 3/4 cup whole milk
- 1/2 cup sour cream
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 tablespoon butter (for cooking)
Coating and Toppings
- 1 cup cinnamon-sugar (for tossing pancakes)
- 1/2 cup melted chocolate (for serving)
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, light brown sugar, kosher salt, and ground cinnamon until evenly combined.
- Combine Wet Ingredients: In a separate bowl, whisk the whole milk and sour cream together. Beat in the eggs one at a time, then stir in the pure vanilla extract until the mixture is smooth and well blended.
- Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients. Stir gently with a wooden spoon until just combined, making sure not to overmix to keep the pancakes tender.
- Cook Pancakes: Heat a large nonstick skillet over medium heat and add the butter. Once the butter is foamy, reduce the heat to medium-low. Ladle the pancake batter into the skillet to form pancakes. Cook each pancake until bubbles form on the surface and the bottom is golden brown, about 3 minutes. Flip and cook the other side for another 3 minutes until golden.
- Coat Pancakes: Immediately after cooking, toss the warm pancakes in the cinnamon-sugar mixture to coat them evenly, mimicking the classic churro texture and flavor.
- Serve: Repeat the cooking and coating process with the remaining batter. Serve the warm churro pancakes immediately alongside melted chocolate for dipping to enhance the indulgent churro-inspired experience.
Notes
- Use a nonstick skillet for best results and easy flipping.
- Do not overmix the batter to keep pancakes fluffy and tender.
- For extra richness, use full-fat sour cream and whole milk.
- The cinnamon-sugar coating should be applied while the pancakes are still warm so it sticks well.
- You can substitute melted chocolate with maple syrup or dulce de leche for different flavor pairings.
