For the Filling

- 12–14 egg roll wrappers (standard size)

- ½ cup sweet chili sauce
- Or homemade blend: ¼ cup sweet and sour sauce mixed with 2 tablespoons soy sauce
Instructions
- Make the Filling: In a medium bowl, beat the softened cream cheese until smooth. Stir in the finely chopped crab meat, green onions, minced garlic, Worcestershire sauce, soy sauce, sugar, sesame oil, ginger, salt, and pepper. Mix until creamy and evenly blended, creating a thick but spreadable filling. Taste and adjust seasonings if desired.
- Prepare the Wrappers: Lay an egg roll wrapper on a clean surface with one corner pointed toward you (diamond shape). Place 2–3 tablespoons of the filling in the center. Fold the bottom corner up over the filling, then fold the left and right corners toward the center. Roll tightly toward the top corner, sealing the edge with the beaten egg. Repeat with remaining wrappers and filling. Place finished rolls seam-side down on a tray.
- Fry the Egg Rolls: Heat oil in a deep skillet or fryer to 350°F (175°C). Fry egg rolls in small batches to avoid overcrowding. Cook for 3–4 minutes per side, turning occasionally, until they are golden brown and crispy. Remove rolls with a slotted spoon and drain on paper towels.
- Serve: Arrange the egg rolls on a platter alongside dipping sauces. Garnish with extra green onions or sesame seeds if desired. Serve hot and fresh to enjoy maximum crunchiness.
