- Prepare the Dressing: In a small bowl, whisk together the extra-virgin olive oil, apple cider vinegar, fresh lemon juice, whole-grain mustard, honey, black pepper, crushed red pepper flakes (if using), and the remaining 1/4 teaspoon salt until well combined.
- Assemble the Salad: Drain the excess water from the cucumbers thoroughly using the salad spinner or blot with paper towels. Transfer them to a large bowl.
