Instructions
- Heat oil: Heat olive oil in a cast iron skillet or Dutch oven over medium heat to prepare for sautéing the spices and vegetables.
- Bloom spices: Add minced garlic, ginger paste, 1 teaspoon turmeric powder, cumin powder, cardamom powder, and ground cinnamon to the hot oil. Stir well and let the spices infuse for about 30 seconds, taking care not to overheat the oil.
- Sauté onion: Add the diced red onion and sauté for approximately 1 minute until it softens slightly and begins to brown, enhancing its sweetness and depth of flavor.
- Add vegetables: Incorporate the diced carrots, diced potato, the remaining turmeric powder, and 1 cup of water. Stir thoroughly to ensure the vegetables are evenly coated with the aromatic spices.
- Simmer: Cover the pan with a lid and cook on medium heat for 10 minutes. Periodically check the carrots and potatoes with a fork to confirm they are nearly tender.
- Add cabbage: Stir in the finely chopped cabbage along with salt and freshly ground black pepper. Cover the pan again and cook for an additional 5 to 10 minutes until the cabbage is tender but still retains some shape and texture.
- Serve: Remove the skillet from heat and garnish the dish with freshly chopped cilantro. Serve the Ethiopian Cabbage hot, ideally accompanied by rice or traditional flatbread to complement the flavors.
