Instructions

  2. Simmer Sauce: Pour in the lightly crushed whole peeled tomatoes along with the water or low-sodium broth. Stir in the fine sea salt and optional red chili flakes. Allow the mixture to simmer gently for 10-15 minutes, stirring occasionally to blend the flavors well. If the sauce becomes too thick, add a bit more liquid to maintain desired consistency.
  3. Cook Pasta: Meanwhile, bring a separate pot of salted water to a boil. Cook the fregola sarda pasta until al dente, following package instructions, then drain thoroughly.
  4. Finish Dish: Add the drained fregola pasta directly into the tomato sauce. Stir in the grated pecorino romano or Parmesan cheese, torn fresh basil leaves, and lemon zest. Taste and adjust seasoning if necessary. Serve immediately, garnished with extra basil and cheese if desired.
