Instructions

  1. Combine dry ingredients: In a mixing bowl, thoroughly mix the cornmeal, self-rising flour, baking powder, salt, and sugar using a fork to ensure even distribution.
  2. Mix wet ingredients: In a separate small bowl, whisk together the buttermilk, honey, and egg until well blended.
  3. Make the batter: Pour the wet mixture into the bowl with the dry ingredients and stir until all dry ingredients are fully incorporated, resulting in a thick dough.
  4. Heat the oil: Pour 1/4 cup of vegetable oil into a 10-inch skillet and heat it over medium heat until hot and shimmering.
  5. Form and fry patties: Drop a heaping tablespoon of the batter carefully into the hot oil, forming a patty. Fry each side for 2-3 minutes or until the bottom turns golden brown.
  6. Flip and finish frying: Turn the patties over and fry the other side for another 2-3 minutes until evenly golden and cooked through.
