Description
This Funfetti Cheesecake Icebox Cake is a delightful no-bake dessert that layers creamy whipped cream with colorful sprinkles and crunchy Golden Oreos. Perfect for celebrations or anytime you want a fun and festive treat, this cake requires just a few simple ingredients and minimal effort, chilling in the fridge until the cookies soften into a cake-like texture.
Ingredients
Scale
Cheesecake Whipped Cream
- 8 oz. cream cheese, softened
- 1/2 cup (57 g) confectioners’ sugar
- 1 tsp. pure vanilla extract
- 3 cups heavy cream, cold
- 1/2 cup rainbow sprinkles, plus more for decorating
Cookies
- 52 to 56 Golden Oreos (approximately 4 layers, 13–14 Oreos per layer)
Instructions
- Make the Whipped Cream Mixture: In a large bowl, use a handheld mixer on medium-high speed or a stand mixer fitted with a whisk attachment to beat the softened cream cheese, confectioners’ sugar, and vanilla extract until light and fluffy. Gradually add the cold heavy cream in ½ cup increments, mixing until combined. Continue to beat until stiff peaks form. Gently fold in the rainbow sprinkles to incorporate them without deflating the cream.
- Layer the Cake: Spread a very thin layer of the whipped cream mixture onto the bottom of an 8-inch springform pan. Arrange an even layer of whole Golden Oreos (about 13 to 14) over the cream. Spread more whipped cream evenly on top of the cookies. Repeat the layering process until you have built up 4 layers of Oreos. Finish with a final layer of whipped cream and sprinkle generously with additional sprinkles on top.
- Prepare for Decoration: Transfer any remaining whipped cream to a piping bag fitted with a large star tip. If you don’t have any whipped cream left, you can skip this step.
- Chill the Cake: Refrigerate or freeze the assembled cake and any extra whipped cream for at least 4 hours or up to overnight. This allows the cookies to soften and meld with the creamy layers, creating a cheesecake-like texture.
- Serve: When ready to serve, remove the cake from the springform pan and optionally pipe additional whipped cream on top for decoration before slicing and enjoying.
Notes
- Ensure the cream cheese is softened to room temperature for easier mixing and a smoother whipped cream.
- Use cold heavy cream to help achieve stiff peaks when whipping.
- Golden Oreos soften as they chill in the cream, creating a chewy texture reminiscent of cheesecake.
- The cake can be made the day before to allow ample time for chilling.
- If you don’t have a piping bag, you can spread the remaining whipped cream with a spatula instead.
