- 1 tsp crushed red pepper flakes

- 2 chicken breasts, cut into 1-inch pieces
- 2 cups cubed pineapple
- 2 green bell peppers, diced
- 1 red onion, diced
For Serving
- White rice
- 2 tsp cilantro, chopped
Instructions
- Preheat the Grill: Preheat your grill or grill pan over medium heat to ensure it is hot enough for cooking the skewers evenly.
- Prepare the Marinade: In a large bowl, whisk together barbecue sauce, soy sauce, rice wine vinegar, sesame oil, minced garlic, minced ginger, and honey until fully combined. Season the marinade with kosher salt and crushed red pepper flakes to taste.
- Assemble the Skewers: Thread the chicken pieces, cubed pineapple, diced green bell peppers, and diced red onion alternately onto skewers. Place the assembled skewers on a baking sheet and pour half of the marinade over them to soak in some flavor.
- Grill the Skewers: Place the skewers on the preheated grill. Brush the top side of the skewers with the remaining marinade. Grill for 5 minutes, then carefully flip them over and brush the other side with marinade as well.
- Continue Cooking: Grill the skewers for an additional 5 minutes or until the chicken pieces are cooked through and reach an internal temperature of 165°F (74°C). The vegetables and pineapple should be tender and slightly charred.
- Serve: Remove the skewers from the grill and serve hot with a side of white rice. Garnish with chopped cilantro for a fresh, vibrant finish.
