  • 2 sheets nori seaweed (cut into small pieces)

Instructions

  1. Crush the almonds: Place the wasabi & soy sauce almonds into a large food processor. Pulse until they are broken down into small pieces, providing a crunchy base for the mixture.
  2. Blend the base mixture: Add the mashed avocado, plain fat-free Greek yogurt, reduced-sodium soy sauce, gluten-free seasoned rice vinegar, minced fresh ginger, and optional salt to the food processor. Blend everything until smooth and creamy, making sure to scrape down the sides as needed to achieve an even texture.
  3. Fold in crab and seasonings: Transfer the creamy mixture into a large bowl. Gently fold in the canned crab meat, toasted sesame seeds, and the small cut pieces of nori seaweed until all ingredients are well combined but crab remains chunky.
  4. Assemble the sushi bites: Spoon dollops of the mixture onto prepared cucumber slices, creating bite-sized portions perfect for serving.
  5. Garnish and serve: Sprinkle additional chopped wasabi & soy sauce almonds on top of each bite for extra crunch and flavor. Serve immediately for the best texture and freshness.
