This Healthy Taco Bowl recipe features seasoned ground beef cooked with onions and garlic, served over crisp iceberg lettuce wedges and topped with fresh tomatoes, radishes, cilantro, and a tangy homemade yogurt lime crema. It’s a flavorful, low-carb meal perfect for a nutritious lunch or dinner.

Ingredients

Scale

For the Taco Meat

  • 2 lbs 80/20 ground beef (or any ground meat)
  • 1 large onion, chopped
  • 3 cloves garlic, finely chopped
  • 2 tbsp olive oil
  • 6–8 tbsp Easy Homemade Taco Seasoning
  • Salt, as needed

For the Bowls

  • 1 head iceberg lettuce
  • Tomatoes, cut into pieces
  • Lena’s Kitchen Pickled Onions
  • Cilantro, fresh
  • Radishes, sliced

For the Yogurt Lime Crema

  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 lime, juiced
  • 1/2 tsp sea salt
  • 1 tsp garlic powder
  • 1–2 tbsp water (to thin out the sauce)

Instructions

  1. Prepare Yogurt Lime Crema: In a small bowl, combine plain Greek yogurt or sour cream with lime juice, sea salt, garlic powder, and 1 to 2 tablespoons of water to thin the sauce to desired consistency. Whisk thoroughly and set aside until assembly.
  2. Sauté Onions: Heat 2 tablespoons of olive oil in a large frying pan over medium heat. Add chopped onion and sauté for 5 to 7 minutes until softened and translucent.
  3. Add Garlic: Add the finely chopped garlic to the pan and cook for an additional minute, stirring frequently to prevent burning.
  4. Cook Ground Meat: Add the ground beef to the pan. Use a spatula to break it apart and cook until no longer pink, approximately 7 minutes, ensuring even browning.
  5. Add Taco Seasoning: Stir in 6 to 8 tablespoons of homemade taco seasoning and mix well. Continue to cook for another 3 minutes to allow flavors to combine.
  6. Assemble Taco Bowls: Cut the head of iceberg lettuce into wedges and place on serving plates. Top each wedge generously with the cooked taco meat mixture.
  7. Add Fresh Toppings: Sprinkle chopped tomatoes, sliced radishes, fresh cilantro leaves, and Lena’s Kitchen pickled onions over the meat and lettuce.
  8. Drizzle with Crema: Spoon the prepared yogurt lime crema over the assembled bowls. Finish each serving with a light sprinkle of additional taco seasoning for extra flavor.

Notes

  • You can substitute ground beef with ground turkey, chicken, or plant-based meat for a different variation.
  • If you prefer a spicier dish, add diced jalapeños or hot sauce to the taco meat.
  • Lettuce wedges can be swapped for romaine or butter lettuce if preferred.
  • The crema can be prepared ahead and refrigerated for up to 3 days.
  • For gluten-free meal options, double-check that the taco seasoning mix contains no gluten ingredients.
