Pizza Dough

  • 1/2 recipe homemade pizza dough (or 1 lb. store-bought pizza dough)
  • 1 Tablespoon (15ml) olive oil, divided
  • 1 Tablespoon (8g) cornmeal

Pizza Toppings

  • 1/3 cup + 2 Tablespoons (130g) your favorite barbecue sauce
  • 1 cup chopped or shredded cooked chicken (about one 8-ounce breast)
  • 2/3 cup (70g) shredded mozzarella cheese
  • 2/3 cup (70g) shredded smoked gouda cheese
  • 1/2 small red onion, thinly sliced
  • 1 Tablespoon chopped fresh cilantro, for topping (or use basil)

Instructions

  1. Prepare Dough: Prepare pizza dough through step 3 of your homemade recipe or thaw store-bought dough if frozen. Preheat the oven to 475°F (246°C) and allow it to heat for 15–20 minutes. If using a pizza stone, place it in the oven now. Lightly grease a large baking sheet or pizza pan with 1/2 Tablespoon olive oil and sprinkle it with cornmeal to give the crust extra crunch and flavor.
  2. Shape the Dough: Punch down the dough to release air bubbles. Divide it in half and freeze unused half if desired. On a floured surface, gently flatten the dough into a disc, then stretch it into a 12-inch circle about 1/2-inch thick. Create a lip by pinching edges to form a rim. If dough shrinks back, cover and rest 5–10 minutes, then continue stretching. Place dough on the prepared pan or a cornmeal-dusted peel if using a pizza stone. Cover loosely and let rest as you prepare toppings.
  3. Top the Pizza: Use fingers to push dents into the dough to prevent bubbles during baking. Brush remaining olive oil over the surface. Evenly spread 1/3 cup (95g) BBQ sauce over dough. Toss cooked chicken with remaining BBQ sauce and distribute evenly. Sprinkle on mozzarella and smoked gouda cheeses followed by thinly sliced red onion.
  4. Bake: Bake the pizza in the preheated oven for 14–15 minutes or until the crust is golden brown and cheese is melted and bubbly.
  5. Garnish and Serve: Remove pizza from oven and sprinkle with chopped fresh cilantro (or basil) if desired. Slice hot and serve immediately.
  6. Storage: Cover leftover pizza tightly and refrigerate up to 5 days. For freezing and reheating, follow pizza dough recipe guidelines for best results.
