  • 1 small garlic clove, grated
  • 3/4 tsp. kosher salt (for ricotta)
  • 1 tbsp. extra-virgin olive oil (to blend into ricotta)

For Garnish:

  • 3 tbsp. hot honey
  • 1 tsp. coarsely chopped fresh rosemary

Instructions

  1. Fry the Bread: In a large skillet over medium-high heat, heat 4 tablespoons of extra-virgin olive oil. Carefully place the bread pieces into the oil and fry until they are golden brown on each side, about 1 to 2 minutes per side. Reduce heat to medium if the bread starts to darken too quickly. Transfer the fried bread to a paper towel-lined plate to drain excess oil.
  2. Repeat Frying: Add 1 tablespoon of olive oil to the skillet, then fry the remaining bread pieces using the same method. Once all the bread is fried, sprinkle it evenly with 1/4 teaspoon kosher salt to season.
  3. Prepare the Whipped Ricotta: In a food processor, combine the whole milk ricotta, grated garlic, and 3/4 teaspoon kosher salt. Blend until smooth and creamy. With the motor running on low speed, slowly stream in the remaining 1 tablespoon of extra-virgin olive oil to incorporate it fully, creating a light and airy texture.
  4. Plate and Garnish: Transfer the whipped ricotta to a serving bowl. Using the back of a spoon, spread the ricotta around the bowl in swirls and dollops to create an inviting presentation. Drizzle the surface generously with hot honey and sprinkle the chopped fresh rosemary on top for an aromatic finish.
