  • 1 tablespoon finely grated lime zest
  • 1/2 cup fresh lime juice (from 7 to 8 limes)
  • 3 tablespoons tequila blanco

Instructions

  1. Prepare the Crust: Arrange a rack in the center of the oven and preheat to 350°F (175°C). Line a 9″ x 9″ baking dish with parchment paper to prevent sticking. In a large bowl, combine the crushed mini pretzels, melted unsalted butter, and 3 tablespoons of granulated sugar. Mix thoroughly, then press the mixture evenly into the bottom of the prepared baking dish to form the crust layer.
  2. Bake the Crust: Place the baking dish in the oven and bake the crust for about 10 minutes, or until it becomes fragrant and slightly darkened. This will help set the crust and bring out the flavors. After baking, transfer the dish to a wire rack to cool while keeping the oven on for the filling.
  3. Make the Filling: In a large bowl, use an electric mixer on medium speed to beat 4 large eggs together with 2 cups of granulated sugar until the mixture is smooth and slightly thickened. Add the all-purpose flour, finely grated lime zest, fresh lime juice, and tequila blanco. Beat again just until all ingredients are fully combined to ensure a smooth filling.
  4. Assemble and Bake Bars: Pour the prepared filling evenly over the cooled pretzel crust. Return the baking dish to the oven and bake for 33 to 35 minutes. The filling should be set and firm to the touch but still slightly jiggly in the center.
  5. Cool and Serve: Remove the baking dish from the oven and allow it to cool completely to room temperature. After cooling, slice the bars into squares. Optionally, dust the top with confectioners’ sugar and garnish with candied lime slices for an extra festive touch. Serve and enjoy!
