  • 1 tsp. chili powder
  • 1/4 tsp. cayenne pepper
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

  • 1/2 cup crumbled cotija or feta cheese
  • 1/4 cup finely chopped fresh cilantro

Instructions

  1. Cook the pasta: In a large pot of boiling salted water, cook the penne pasta according to the package instructions until it is al dente. Stir occasionally to prevent sticking. Once cooked, drain the pasta and set aside.
  2. Blister the corn: While the pasta is cooking, heat a large skillet over medium-high heat and melt 2 tablespoons of unsalted butter. Add 2 cups of frozen or fresh corn to the skillet and cook, stirring occasionally, until the corn is blistered and slightly charred, about 5 to 8 minutes. Remove from heat.
  3. Prepare the dressing: In a medium bowl, whisk together 1/2 cup mayonnaise, 1/3 cup Mexican crema or sour cream, the juice of 1 lime, 1 teaspoon chili powder, and 1/4 teaspoon cayenne pepper. Season with kosher salt and freshly ground black pepper to taste, adjusting the seasoning as desired.
  4. Combine all ingredients: In a large mixing bowl, toss together the cooked penne pasta, blistered corn, 1/2 cup crumbled cotija or feta cheese, and 1/4 cup finely chopped fresh cilantro. Pour the prepared dressing over the top and toss well to coat all the ingredients evenly.
