Mint Frosting

  • 3/4 cup butter (room temperature)
  • 3 cups powdered sugar
  • 1 1/2 tablespoons water
  • 1/2 teaspoon peppermint extract
  • 6 drops green food coloring

Instructions

  1. Prepare the Baking Dish: Line a 9-inch x 13-inch baking dish with parchment paper, allowing some foil to hang over the edges. Spray the foil with non-stick cooking spray and set aside to prevent sticking.
  2. Melt Butter and Marshmallows: Place a large pot over medium heat, add 1/2 cup butter, and let it melt. Add the mini marshmallows and cocoa powder, stirring frequently until marshmallows are completely melted and smooth.
  3. Add Chocolate Chips: Remove the pot from heat and stir in the semi-sweet chocolate chips until fully melted and combined with the marshmallow mixture.
  4. Mix in Rice Krispies: Pour the Rice Krispies cereal into the pot and stir well until all cereal is evenly coated with the chocolate marshmallow mixture.
  5. Press into Dish: Transfer the mixture into the prepared baking dish and press down into an even layer using your hands (careful, it’s hot) or a rubber spatula.
  6. Cool the Treats: Allow the treats to cool completely for 30 minutes to 1 hour until they set firm.
  7. Make Mint Frosting: In the bowl of a stand mixer or large mixing bowl with a hand mixer, add 3/4 cup room temperature butter. Mix on low speed and gradually add 3 cups powdered sugar, one cup at a time, mixing well between each addition.
  8. Beat Frosting: Once the frosting pulls away from the sides, increase the speed to high and beat until it lightens in color and becomes fluffy.
  9. Add Flavor and Color: Add 1 1/2 tablespoons water, 1/2 teaspoon peppermint extract, and 6 drops green food coloring. Mix until everything is evenly combined and the frosting achieves a vibrant green color. Adjust food coloring as desired.
  10. Frost the Treats: Spread the mint frosting evenly over the cooled rice krispie treats.
  11. Serve: Use the foil to carefully lift the treats out of the baking dish. Cut into 20 squares using a 4×5 grid and serve.
