Instructions

  1. Prepare the frosting: In a medium bowl, beat the softened butter and powdered sugar together until smooth. Mix in the vanilla extract and 2-3 tablespoons of milk or heavy cream until the frosting is light and fluffy and easy to pipe or spread.
  2. Divide and color the frosting: Separate the frosting into multiple bowls, depending on the number of colors you want to use. Add a few drops of Halloween-themed food coloring to each bowl and mix until the color is vibrant and uniform.
  3. Fill piping bags: Transfer the colored frosting into piping bags. You can use piping bags with no tip, or a plain round tip if you prefer more control during application.
  4. Match the cookies: Pair your Chips Ahoy cookies by size and shape to ensure sandwich cookies look even. Flip one cookie in each pair upside down to expose the flat side for frosting application.
  5. Assemble the sandwich cookies: Pipe or spread a generous dollop of colored frosting onto the flat side of one cookie in each pair. Gently press the second cookie on top to create a sandwich cookie.
  6. Add candy eyes: While the frosting is still soft, press candy eyes into the frosting on the side of the cookie so they peek out like little monster eyes. Customize with 1, 2, or 3 eyes per cookie for variety and fun monster effects.
