Tartine Assembly

Instructions
- Prepare Stracciatella: Shred the fresh mozzarella into very fine strands using your hands. Place the shredded mozzarella in a bowl and add the heavy cream. Cover and refrigerate for at least 3 hours or up to 3 days to allow the cheese and cream to meld into a creamy stracciatella texture.
- Make Pistachio Sauce: In a food processor, combine pistachios, lemon zest, champagne vinegar, Parmigiano Reggiano, basil leaves, chives, salt, pepper, and olive oil. Pulse until the mixture becomes chunky but spreadable. Add more olive oil as needed to reach desired consistency. - Prepare the Baguette: Slice the baguette lengthwise into two halves. Drizzle olive oil on the cut sides and set aside for toasting.

- Toast the Baguette: Toast or sear the baguette halves on the skillet or griddle until golden and crispy to provide a sturdy base for the tartine.
- Assemble Tartine: Rub the cut sides of the toasted baguette with the garlic clove for flavor. Spread a generous layer of stracciatella on the baguette, drizzle with honey, and sprinkle crushed red peppers to taste. Arrange the seared mortadella on top, then add dollops of the pistachio sauce. Finish by sprinkling lemon zest and optionally garnish with chive blossoms and edible flowers.
- Serve: Cut the tartine into manageable pieces and serve immediately while the mortadella is warm and the bread is crisp.
