Instructions
- Preheat and Prepare Ingredients: Arrange a rack in the center of your oven and preheat it to 400°F (200°C). In a 13″ x 9″ baking dish, combine cherry tomatoes, gnocchi, finely chopped garlic, 1/4 cup extra-virgin olive oil, kosher salt, crushed red pepper flakes, and freshly ground black pepper. Toss everything gently to ensure even coating.
- Add Feta Cheese: Nestle the block of feta cheese into the center of the tomato and gnocchi mixture. Drizzle a little extra olive oil over the top of the feta to help it soften and brown during baking.
