Instructions
- Prepare the Balsamic Glaze: In a small saucepan over medium heat, combine the balsamic vinegar and fish sauce. Bring to a simmer and cook, stirring occasionally, until the mixture thickens and reduces by half, about 15 minutes. The glaze should be thick enough to coat the back of a spoon. Remove from heat and let cool slightly.
- Season the Tomatoes: Place the quartered tomatoes in a fine-mesh sieve set over a bowl. Sprinkle with 1 teaspoon kosher salt and toss to coat. Let them sit for 10 minutes to release excess liquid.
- Heat the Frying Oil: In a large, heavy pot or Dutch oven fitted with a deep-fry or candy thermometer, add neutral oil to a depth of 1 1/2 inches. Heat over medium heat until the thermometer reads 350°F, preparing for frying the dumplings.
- Make the Cucumber Dressing: In a large bowl, mix the soy sauce, chili crisp, and sugar until combined. Add the sliced cucumbers and the white parts of the scallions to the bowl. Season with 1/4 teaspoon salt and toss the cucumbers in the dressing thoroughly.
- Fry the Dumplings (Traditional Method): Working in batches, transfer frozen dumplings into a fine-mesh sieve or slotted spoon and carefully lower them into the hot oil. Fry, turning the dumplings halfway through, until golden brown and crispy, about 5 to 7 minutes. Be cautious of oil splatters due to frozen dumplings. - Assemble the Salad: Add the drained and salted tomatoes to the bowl with the dressed cucumbers and toss gently to combine. Transfer this mixture to a large platter. Arrange the crispy dumplings on top of the salad, drizzle with the balsamic glaze, and sprinkle with toasted sesame seeds and the green parts of the scallions.
