Ingredients
Scale
Cheese Mixture
- 3 cups shredded mozzarella, divided
- 2 (8-ounce) blocks cream cheese, softened
- 1 cup ricotta cheese
- 1/3 cup freshly grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes
- Kosher salt, to taste
Toppings and Sauce
- 3/4 cup pizza sauce
- 1 cup mini pepperoni
- 2 tablespoons freshly grated Parmesan cheese (additional, divided)
Biscuit Topping
- 2 (16-ounce) cans refrigerated biscuits (such as Pillsbury Grands)
- 1/4 cup extra-virgin olive oil
- 3 cloves garlic, minced
- 1 tablespoon freshly chopped parsley
Instructions
- Prepare Cheese Mixture: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine 2 cups of the shredded mozzarella, softened cream cheese, ricotta, 1/3 cup Parmesan, Italian seasoning, and crushed red pepper flakes. Season the mixture with kosher salt to taste. Mix until smooth and evenly blended.
- Layer Dip Base: Spread the cheese mixture evenly in a 9-by-13-inch baking dish. Next, evenly spread the 3/4 cup of pizza sauce over the cheese mixture. Then top with the remaining 1 cup of shredded mozzarella and scatter the mini pepperoni over the top.
- Prepare Biscuit Topping: Halve each biscuit and roll each half into a ball. Place these biscuit balls evenly on top of the layered dip in the baking dish.
- Garlic Oil and Seasoning: In a small bowl, whisk together the extra-virgin olive oil, minced garlic, and freshly chopped parsley. Using a brush, evenly coat all the biscuit balls with the garlic oil mixture. Sprinkle the remaining 2 tablespoons of Parmesan cheese over the biscuits for a savory finish.
- Bake: Place the baking dish in the oven and bake until the biscuits are golden brown and the cheese is melty, about 45 minutes. Then cover the dish with aluminum foil and continue baking for an additional 15 to 20 minutes to ensure the biscuits are fully cooked through.
- Cool and Serve: Remove from oven and let the dip cool for about 10 minutes before serving. This will help the layers set slightly and make it easier to pull apart and enjoy.
Notes
- You can substitute pepperoni with cooked sausage or omit for a vegetarian option.
- Make sure the cream cheese is softened to ensure an even mixture.
- For extra heat, add more crushed red pepper flakes or a drizzle of hot sauce when serving.
- This dip is great served warm with additional breadsticks or vegetables for dipping.
- Leftovers can be refrigerated and reheated in the oven to maintain crispiness of the biscuit topping.
