- 5 1/2 cups shredded provolone cheese

Instructions
- Prepare Chicken Cutlets: Place one chicken breast on a cutting board and slice three-quarters of the way through the thickest side, then fold open like a book and cut further to divide into two thin cutlets. Place each cutlet between two sheets of plastic wrap and gently pound with a meat mallet or rolling pin to 1/4-inch thickness. Repeat with the second chicken breast.
- Marinate Chicken: Whisk buttermilk, Dijon mustard, and 2 teaspoons kosher salt in a large bowl. Add the chicken cutlets and turn to coat. Cover and refrigerate for at least 1 hour or up to overnight to tenderize and infuse flavor.
- Make Breading Mixture: In a large shallow bowl, whisk together sesame seeds, all-purpose flour, cornstarch, baking powder, 1/2 cup Parmesan cheese, and 1 1/2 teaspoons kosher salt. Add 2 tablespoons of the buttermilk marinade mixture and, using clean fingers, mix until pea-size clumps form to create a textured coating.

- Assemble and Broil: Spread one-third of the sauce mixture in a large baking dish. Arrange fried chicken cutlets slightly overlapping on top. Spoon remaining sauce evenly over the chicken, then sprinkle with shredded provolone and the remaining 1/4 cup Parmesan cheese. Broil, watching closely, until the cheese is bubbly and golden, about 5 to 6 minutes.
