  • 2 tsp chicken bouillon
  • 2 garlic cloves, finely chopped or grated
  • 1 tbsp finely grated peeled ginger

Main Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, sliced crosswise into 1/2“-thick pieces
  • 1 bunch scallions, cut into 1” pieces
  • 1 lb broccoli, cut into 1/2” florets
  • 8 oz snow peas, trimmed
  • 2 tbsp vegetable oil
  • Kosher salt
  • Freshly ground black pepper
  • 4 (3-oz) packages ramen noodles, seasoning packets discarded
  • Toasted sesame seeds, for serving

Instructions

  1. Prepare Sauce: Arrange a rack in the upper third of the oven and heat the broiler. In a small bowl, whisk together soy sauce, toasted sesame oil, oyster sauce, maple syrup, sriracha, and chicken bouillon until well combined.
  2. Marinate Chicken: In a medium bowl, toss the sliced chicken with garlic, ginger, and 2 tablespoons of the prepared soy sauce mixture. Reserve the remaining sauce for later use.
  3. Prepare Vegetables: Bring a large pot of salted water to a boil. On a large sheet pan, toss the scallions, broccoli florets, snow peas, vegetable oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Spread vegetables evenly and arrange the marinated chicken pieces over them.
  4. Broil Chicken and Vegetables: Broil the sheet pan under the preheated broiler, watching closely, until the chicken is browned and cooked through, about 3 to 5 minutes.
  5. Cook Ramen Noodles: Meanwhile, cook the ramen noodles in a large pot of boiling salted water according to package instructions. Drain and rinse with cold water to prevent sticking.
  6. Combine Noodles and Sauce: Add the cooked ramen noodles to the sheet pan along with the reserved sauce. Toss everything together to coat the noodles, chicken, and vegetables evenly, then spread into an even layer on the pan.
  7. Broil to Crisp Noodles: Continue broiling, watching carefully, until the noodles become crispy and the broccoli is crisp-tender, about 5 to 7 minutes. For extra crispiness, toss the noodles again, spread evenly, and broil for an additional 3 to 5 minutes.
  8. Garnish and Serve: Sprinkle toasted sesame seeds over the finished dish and add more sriracha if desired. Serve immediately.
