  • 1/3 c. low-sodium beef broth
  • 2 lb. Yukon Gold potatoes, unpeeled, cut into 1 1/2″ pieces
  • 1 (15-oz.) can black beans, drained
  • 1 (10-oz.) can diced tomatoes and green chiles (such as Rotel)
  • 3/4 c. fresh or frozen corn, thawed, drained
