Dough
- 1 and 1/2 cups (360ml) warm water (lukewarm; around 100°F / 38°C)
- 2 and 1/4 teaspoons (7g) instant or active dry yeast (1 standard packet)
- 1 Tablespoon brown sugar or granulated sugar
- 1 teaspoon salt
- 1 Tablespoon (14g) unsalted butter, melted and slightly cooled
- 3 and 3/4–4 cups (469–500g) all-purpose flour (spooned & leveled), plus more for hands and work surface
Topping and Bath
- Coarse salt or coarse sea salt, for sprinkling
- 1/2 cup (120g) baking soda
- 9 cups (2.1L) water

Instructions
- Make the dough: Whisk warm water, yeast, and sugar together in a stand mixer bowl fitted with a paddle or dough hook. Cover and let sit for 5 minutes until foamy. Add salt, melted butter, and 3 cups flour. Beat on low speed for 1 minute, scrape sides, then add 3/4 cup flour. Continue beating until dough forms and pulls away from sides, about 2 minutes. Add remaining 1/4 cup flour if dough is sticky and beat 1 more minute.
- Knead the dough: Switch to dough hook and knead for 5 minutes, or knead by hand on a lightly floured surface for 5 minutes. Add flour sparingly if sticky. Dough should be soft and slightly tacky but hold shape. Perform the windowpane test to confirm kneading is sufficient.
- Rest the dough: Cover lightly with a towel and let rest 10-30 minutes to relax gluten. Meanwhile, prepare baking soda bath by boiling water and baking soda as next step.
- Preheat and prepare baking sheets: Preheat oven to 400°F (204°C). Line two baking sheets with silicone mats or parchment paper lightly greased or sprayed with nonstick spray.
- Shape the dough: Divide dough into 6 equal pieces. Lightly flour work surface. Roll each into a 20-inch rope. If dough resists, cover and rest 10 minutes, then continue. Cut each rope into 1.5–2-inch pieces for bites.
- Baking soda bath: Bring 9 cups water and 1/2 cup baking soda to a boil in a large pot. Drop 8-10 pretzel bites at a time into boiling water for 10–15 seconds. Remove with slotted spoon, drain, and place on prepared sheets. Sprinkle with coarse salt while wet. Repeat with remaining bites. Boiled but unbaked bites can be refrigerated up to 24 hours before baking.
- Bake: Bake bites for 15 minutes or until deep golden brown. Remove from oven and serve warm with desired dipping sauce.
- Storage and reheating: Store leftover pretzel bites at room temperature in an airtight container for up to 3 days. To reheat, microwave briefly or bake at 350°F (177°C) for 5 minutes to restore softness and warmth.
Notes
- You can use brown sugar or granulated sugar interchangeably in the dough.
- For a sweeter twist, omit the coarse salt and sprinkle pretzel bites with cinnamon sugar after the baking soda bath.
- The baking soda bath is crucial for achieving the classic pretzel crust and color; do not skip or overboil the bites to avoid metallic taste.
- Use silicone baking mats if possible for best nonstick results; parchment paper sprayed with oil also works.
