- 1 pound sirloin steak, cooked to desired doneness and thinly sliced
- 1 cup caramelized onions
- 4 slices Provolone or Pepper Jack cheese
- ½ cup garlic aioli
Bread and Butter
- 8 slices thick-cut sourdough bread
- 4 tablespoons butter, softened
Instructions
- Preheat the skillet: Heat a griddle or large skillet over medium-high heat to prepare for toasting the sandwiches.
- Prepare the bread bases: Butter the outside of all 8 slices of sourdough bread. Place 4 slices, buttered side down, onto the hot griddle, then immediately layer each with a slice of cheese.
- Add onions and the top bread slices: On the remaining 4 slices of bread, buttered side down, evenly distribute the caramelized onions. Place these slices, buttered side up, on top of the cheese-covered bread on the griddle to form sandwiches.
- Cook and melt cheese: Allow the sandwiches to cook for 3-4 minutes until the bread is golden and toasted and the cheese has melted. To help the cheese melt evenly, cover the skillet with a lid if needed.
- Add aioli and steak: Remove the sandwiches carefully from the heat. Spread garlic aioli over the melted cheese side inside each sandwich, then top with the thinly sliced steak.
- Assemble and serve: Close the sandwiches and place them on a cutting board. Slice each sandwich in half and serve immediately while warm.
