Description
Searing steak bites mingle with caramelized sweet potatoes and crisp peppers in a skillet, finished with bright cilantro and coconut aminos for a savory, low-fuss weeknight meal.
Ingredients
Scale
Sweet Potatoes
- 1 large sweet potato (about 12 ounces), diced into 1″ pieces
- 1 teaspoon sea or kosher salt
Steak
- 1 lb flat iron steak, diced into 1” pieces
- 2 tablespoons olive oil (divided for cooking)
- 2 cloves garlic, minced
Vegetables & Aromatics
- 2 bell peppers, seeded and diced into 1” pieces
- 4 green onions, thinly sliced
Finishing & Flavor
- 2 tablespoons coconut aminos
- 2 teaspoons cracked black pepper
- 2 tablespoons fresh chopped cilantro
Instructions
- Prep potatoes: Place the diced sweet potatoes in a microwave-safe bowl, sprinkle with 1 teaspoon salt, cover, and microwave on high until just tender, about 4–6 minutes. Stir halfway; they should have a slight resistance when pierced. Set aside.
- Sear steak: Heat a large 12″ skillet over high heat. Add 1 tablespoon olive oil and allow it to shimmer. Add the steak in a single layer and cook, turning every 2 minutes, until browned and medium inside, about 10 minutes. Remove steak with a slotted spoon and set aside on a plate.
- Brown potatoes: Add the remaining tablespoon olive oil to the skillet. Add the sweet potatoes and toss to coat. Cook, stirring occasionally, until browned and heated through, about 3–4 minutes.
- Aromatics: Make a well in the center of the pan and add the minced garlic. Sauté, stirring occasionally, until fragrant, about 1 minute.
- Vegetables: Add the bell peppers and green onions; toss with the potatoes and sauté until peppers are bite-tender, about 3–4 minutes.
- Combine: Return the steak and any juices to the pan along with the coconut aminos. Toss everything together and cook an additional 1–2 minutes until the liquid evaporates.
- Finish: Add the remaining cilantro, toss, remove from heat, and divide onto plates. Top with extra cilantro if desired and serve immediately.
Notes
- Microwave timing may vary; aim for just-tender potatoes to prevent mushiness later.
- For a deeper sear, pat the steak pieces dry before cooking and avoid overcrowding the pan.
- Leftovers refrigerate well for up to 2 days and reheat in a skillet to regain texture.
