Instructions

  1. Mix filling: In a bowl, combine the lean ground pork, finely chopped shrimp (if using), grated ginger, minced garlic, soy sauce, kosher salt to taste, sesame oil, white pepper, and finely chopped scallions. Mix thoroughly until all ingredients are evenly blended and the filling has a uniform texture.
  2. Assemble dumplings: Lay one dumpling wrapper flat on a clean surface. Place a spoonful of the prepared filling in the center of the wrapper. Dip your finger in water and moisten the edges of the wrapper to help seal. Fold the wrapper over the filling into a half-moon shape and press the edges together tightly, creating pleats on one side to secure the filling inside. Repeat this process for all wrappers and filling.
  3. Prepare steamer: Line a bamboo steamer with parchment paper perforated with small holes, or lightly oil the steamer surface to prevent sticking. Arrange the assembled dumplings in a single layer inside the steamer, ensuring they do not touch each other to allow steam circulation.
  4. Steam dumplings: Place the bamboo steamer over a pot of boiling water, cover with a lid, and steam the dumplings for 10 minutes or until the filling is fully cooked through. Remove the steamer from the heat carefully.
  5. Serve: Serve the steamed dumplings immediately while hot, accompanied by your preferred dipping sauce for enhanced flavor.
