Instructions
- Preheat oven: Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan to prepare it for the crust.
- Bake crust: In a bowl, combine graham cracker crumbs, 3 tablespoons granulated sugar, and melted butter. Mix well and press the mixture firmly into the bottom and about 1 inch up the sides of the springform pan. Bake for 10 minutes, then remove and allow to cool slightly.
- Mix filling: In a large bowl, beat the softened cream cheese until smooth and creamy. Add 1 cup sugar and sour cream, mixing until combined. Stir in vanilla extract, then add eggs one at a time, mixing gently after each addition just until combined. If using, fold in lemon zest. Pour the cream cheese filling evenly over the cooled crust.
- Bake cheesecake: Place the springform pan inside a larger baking dish to create a water bath. Carefully pour hot water into the larger dish until it reaches halfway up the sides of the springform pan. Bake the cheesecake for approximately 55 minutes until the edges are set and the center is slightly jiggly.
- Chill: Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or preferably overnight to allow it to set completely.
- Simmer strawberries: In a small saucepan over medium heat, combine the quartered strawberries, 4 1/2 tablespoons sugar, and lemon juice. Bring to a gentle simmer and let the strawberries soften and break down, stirring occasionally.
- Thicken sauce: Mix cornstarch with water to create a slurry, then stir it into the simmering strawberry mixture. Cook for about 2 minutes or until the sauce thickens. Remove from heat and allow to cool. Once cooled, spoon the strawberry topping evenly over the chilled cheesecake before serving.
