Instructions

  2. Make the Cheesecake Filling: Beat softened cream cheese with sugar until smooth. Add sour cream, eggs one at a time, vanilla extract, and optional lemon juice, mixing until just combined without overbeating. Fold in diced strawberries or strawberry puree. Spoon the filling evenly over the cooled crusts, filling each liner nearly to the top. Bake at 325°F (160°C) for 20–25 minutes until centers are set but slightly jiggly.
