  • Diet: Vegetarian

Description

These Stuffed Mini Peppers are a delightful appetizer featuring sweet mini peppers filled with a creamy mixture of goat cheese, Parmesan, garlic, and jalapeño for a perfect balance of flavors. Roasted to tender perfection and garnished with fresh parsley, they make an easy, elegant snack or party treat.

Ingredients

Scale

Peppers

  • 16 ounces mini sweet peppers
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon kosher salt (or to taste)

Filling

  • 10 ounces goat cheese (softened)
  • 2/3 cup grated Parmesan cheese
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 4 teaspoons minced garlic
  • 1 small jalapeño (seeded and finely chopped)
  • 1/4 teaspoon black pepper

Garnish

  • Fresh parsley (chopped)

Instructions

  1. Preheat oven: Preheat your oven to 425°F (220°C) to prepare for roasting the stuffed peppers.
  2. Prep peppers: Wash the mini sweet peppers thoroughly. Cut each pepper in half lengthwise, then toss them in a bowl with extra-virgin olive oil and kosher salt until they are well coated.
  3. Make filling: In a separate bowl, mix together the softened goat cheese, grated Parmesan cheese, onion powder, dried oregano, minced garlic, finely chopped jalapeño (with seeds removed), and black pepper until fully combined.
  4. Fill peppers: Spoon a generous amount of the cheese filling into each pepper half, ensuring each piece is well stuffed but not overflowing.
  5. Roast: Arrange the stuffed peppers in a single layer on a baking sheet. Place the sheet in the preheated oven and roast for 18-22 minutes, or until the peppers are softened and the cheese filling is lightly toasted and warmed through.
  6. Garnish and serve: Remove from oven and sprinkle fresh chopped parsley over the top. Serve warm as a tasty appetizer or side dish.

Notes

  • For a spicier kick, leave some seeds in the jalapeño or add a pinch of cayenne pepper to the filling.
  • These stuffed peppers can be prepared ahead of time and refrigerated; roast just before serving.
  • You can substitute goat cheese with cream cheese for a milder flavor.
  • Use gluten-free Parmesan to keep the recipe gluten-free.
  • Adjust salt to taste depending on the saltiness of the cheeses used.
