Instructions

  1. Rinse beans: Drain and rinse the soaked red kidney beans thoroughly under cold water. Set them aside, prepared for cooking in the recipe.
  2. Sauté vegetables: Heat the olive oil in a large pot over medium heat. Add the diced yellow onion, green bell pepper, celery, and minced garlic. Sauté the vegetables for about 5 minutes until they become soft and fragrant.
  3. Combine ingredients: Add the soaked beans to the pot along with the vegetable broth. Stir in the dried thyme, dried oregano, bay leaves, smoked paprika, and cayenne pepper to infuse the beans with rich flavors.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low and allow it to simmer gently, uncovered, for about 2 hours. Stir occasionally and check bean tenderness. For a thicker, creamier texture, mash a portion of the beans against the side of the pot with a spoon.
  5. Season: Once the beans are tender and creamy, season with salt and black pepper to taste. Add a spritz of fresh lime juice if desired to brighten the flavors.
