  • 7 ounces firm tofu (sliced into strips)
  • 1 avocado (sliced)
  • 1 cucumber (sliced into strips)
  • 1 large carrot (sliced into strips)

  • 4 nori sheets
  • Soy sauce (for serving)

Instructions

  1. Cook rice: Rinse sushi rice thoroughly under cold water until the water runs clear to remove excess starch. Cook the rice with water using a rice cooker or on the stovetop until all the water is absorbed and the rice is tender.
  2. Season rice: In a small bowl, combine rice vinegar, sugar, and salt. Gently fold this mixture into the warm cooked rice, being careful not to mash the grains. Allow the rice to cool to room temperature before assembling the sushi.
  3. Fry tofu: Optionally, heat a skillet over medium heat and pan-fry the tofu strips with a splash of soy sauce until they become golden and crispy on the edges for added flavor and texture.
  4. Spread rice on nori: Place a nori sheet shiny side down on a bamboo sushi rolling mat. With wet hands to prevent sticking, spread an even layer of cooled sushi rice over the nori, leaving about a 1-inch gap at the top edge to seal the roll later.
  5. Add filling and roll sushi: Lay strips of tofu, avocado, cucumber, and carrot evenly over the rice. Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to create a tight roll. Moisten the top edge of the nori with a bit of water to seal the roll closed.
  6. Slice sushi: Using a very sharp knife dipped in water to prevent sticking, slice the sushi roll into bite-sized pieces. Arrange on a plate and serve with soy sauce for dipping.
