These Watermelon and Feta Bites are a refreshing and vibrant appetizer perfect for summer gatherings. Juicy watermelon is paired with creamy feta cheese, drizzled with a sweet and spicy honey-balsamic glaze, and topped with crunchy pistachios and fresh mint for a delightful burst of flavors and textures.

  • 2 tbsp white balsamic vinegar

  • 1 large block feta cheese
  • 1/4 cup pistachios, crushed
  • Fresh mint leaves, to taste

Instructions

  1. Make the Glaze: In a saucepan, combine the honey, crushed red pepper, and white balsamic vinegar. Bring the mixture to a simmer over medium heat. Once it thickens enough to coat the back of a spoon, turn off the heat and allow the glaze to cool completely.
  2. Cut the Watermelon: Slice the watermelon in half and carefully remove the rind. Cut a rectangle about 1 inch thick from the watermelon flesh. Then slice it lengthwise into two rectangles approximately 1/2 inch thick each. This creates uniform pieces for assembling the bites.
  3. Cut the Feta: Slice the block of feta cheese to match the size of the watermelon rectangles. Then slice it lengthwise into two rectangles about 1/2 inch thick, mirroring the watermelon pieces for an even stack.
  4. Assemble: Place one watermelon rectangle flat side down, top it with a matching rectangle of feta cheese, then cover with the second watermelon rectangle. Cut the stacked layers into 6 evenly sized squares. Repeat this assembly process with the remaining watermelon and feta slices.
  5. Finish and Serve: Drizzle the prepared honey-balsamic glaze over the watermelon and feta stacks. Sprinkle the crushed pistachios and fresh mint leaves on top. Skewer each bite with a toothpick or small skewer for easy handling and serve immediately for a fresh appetizer.
