Watermelon Rind

- 2/3 cup granulated sugar
- 2 cinnamon sticks
- 1 thin slice fresh ginger root

- 3/4 teaspoon black peppercorns
Instructions
- Boil rind: In a medium saucepan, cover the watermelon rind pieces with water and add 1 tablespoon coarse salt. Bring to a boil and cook for 5 to 7 minutes until the rind becomes tender. Drain thoroughly and set aside.
- Prepare syrup: In a separate saucepan, combine 1 1/2 cups distilled white vinegar, 1 1/2 cups water, 2/3 cup granulated sugar, 2 cinnamon sticks, 1 thin slice fresh ginger root, 1 teaspoon whole cloves, and 3/4 teaspoon black peppercorns. Bring mixture to a boil over medium heat, stirring occasionally until the sugar completely dissolves and the syrup is fragrant.
- Jar pickles: Place the hot, drained watermelon rind into sterilized jars, packing them snugly. Ladle the hot syrup over the rind pieces, leaving about 1/2-inch headspace at the top. Wipe the rims clean, seal tightly with lids, and allow to cool to room temperature. Refrigerate the pickles for at least 24 hours to develop flavor before serving.
