Berry Tiramisu Recipe
Introduction
This Berry Tiramisu is a fresh and fruity twist on the classic Italian dessert. Layers of mixed berries, creamy mascarpone, and delicate ladyfingers soaked in berry juice create a light, refreshing treat perfect for any occasion.

Ingredients
- 1 ½ pounds fresh strawberries (washed, hulled and chopped)
- 12 ounces fresh blueberries (washed and dried)
- 12 ounces raspberries (washed and dried)
- ¾ cup (155g) sugar
- 4 tablespoons (60ml) amaretto liqueur (optional)
- ¾ to 1 cup (180-240ml) water
- 6 large egg yolks
- 1 cup (207g) sugar
- 1 ¼ cups (285g) mascarpone cheese*
- 1 ¾ cups (420ml) heavy whipping cream (cold)
- 1 package ladyfingers (17.5 ounce package)
- Freeze dried berries (optional)
- 1 ¼ cups (300ml) heavy whipping cream (cold, for decorating)
- ½ cup (58g) powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Step 1: Combine the strawberries, blueberries, raspberries, and ¾ cup sugar in a large bowl. Toss gently to coat the fruit with sugar. Cover and refrigerate for 2-3 hours to allow the berries to release their juices.
- Step 2: Drain the juices from the berries into a measuring cup. You should have at least 1 cup of juice; if not, let the fruit sit longer. Add the amaretto if using, then add water until you have a total of 2 cups of liquid.
- Step 3: In a double boiler or metal bowl over simmering water, whisk together the egg yolks and 1 cup sugar. Cook while whisking vigorously for about 5 minutes until the mixture thickens, increases in volume, turns pale yellow, and reaches 160°F. Set aside to cool slightly.
- Step 4: Whip 1 ¾ cups of cold heavy cream in a large bowl until stiff peaks form. When egg mixture is cooled but still slightly warm, fold in the mascarpone cheese gently until combined. Then fold in the whipped cream in two parts until smooth and creamy. Set aside.
- Step 5: Quickly dip each ladyfinger into the berry juice mixture for about 3 seconds and lay them in a single layer in a 9×13 inch pan (about 8 ladyfingers across, 3 rows).
- Step 6: Spread half of the mixed berries evenly over the ladyfingers. Then spread half of the mascarpone cream over the berries.
- Step 7: Repeat the layers: dip ladyfingers in juice, line the pan, add remaining berries, then top with the remaining mascarpone cream. Refrigerate for at least 3-4 hours or overnight to set.
- Step 8: For decoration, grind freeze dried berries into a powder and sprinkle over the tiramisu immediately to avoid clumping.
- Step 9: Whip 1 ¼ cups cold heavy cream with powdered sugar and vanilla extract until stiff peaks form. Pipe or spread on top of the tiramisu as desired.
- Step 10: Serve chilled. Store leftovers well covered in the fridge.
Tips & Variations
- Use ripe, fresh berries for the best flavor and natural sweetness.
- Amaretto liqueur adds a lovely almond note but can be omitted for a non-alcoholic version.
- Freeze dried berries make an attractive, flavorful garnish but can be skipped if not available.
- Be careful not to over-soak ladyfingers to keep layers from becoming soggy.
- You can substitute raspberries for blackberries or any other berries you prefer.
Storage
Store the tiramisu covered in the refrigerator for up to 2 days for best texture and flavor. It may last a third day but could become mushy as the ladyfingers absorb moisture. Reheat is not recommended; serve chilled for optimal taste.

Whipped Cream Topping
- 1 ¼ cups (300ml) heavy whipping cream (cold)
- ½ cup (58g) powdered sugar
- 1 teaspoon vanilla extract
Optional Garnish
- Freeze dried berries (for powder garnish)
Instructions
- Make Berries and Juice Mixture: Combine the berries and sugar in a large bowl, gently tossing to coat the fruit evenly with sugar. Cover and refrigerate for 2-3 hours to allow the berries to release their juices.
- Drain Juice: Drain the juice from the berries into a measuring cup. Ensure you have at least 1 cup of juice; if not, allow the berries to sit longer and extract more juice.
- Prepare Juice Mixture: Add the amaretto (if using) to the berry juice. Top up with water to reach 2 cups total of liquid. If no amaretto is used, simply use water to make 2 cups.
- Make Mascarpone Cream – Egg Yolks: In a double boiler or metal bowl placed over simmering water, whisk the egg yolks and sugar together. Continue whisking vigorously for about 5 minutes until the mixture thickens, becomes pale yellow, and reaches 160°F. Some graininess is acceptable.
- Cool Egg Mixture: Set the cooked egg yolk mixture aside to cool to just above room temperature.
- Whip Cream: While the eggs cool, whip 1 ¾ cups of cold heavy whipping cream on high speed until stiff peaks form.
- Combine Mascarpone Mixture: Gently fold the mascarpone cheese into the cooled egg yolk mixture until combined.
- Fold Whipped Cream: Fold the whipped cream into the mascarpone and egg mixture in two batches until smooth and fully combined. Set aside.
- Assemble Layers: Quickly dip each ladyfinger into the berry juice mixture for about 3 seconds and arrange in the bottom of a 9×13 inch pan, roughly three rows of eight ladyfingers each.
- Add First Berry Layer: Spread half of the mixed berries evenly over the ladyfingers.
- Add Mascarpone Layer: Spread half of the mascarpone filling evenly over the berries.
- Repeat Layers: Repeat the process by dipping another layer of ladyfingers, adding remaining mixed berries, then topping with the rest of the mascarpone filling.
- Chill Dessert: Refrigerate the assembled tiramisu for at least 3-4 hours or overnight to set and meld flavors.
- Prepare Garnish (Optional): If using freeze-dried berries, pulse them in a food processor to a fine powder and sprinkle immediately over the top to avoid clumping.
- Make Whipped Cream Topping: Whip the heavy whipping cream, powdered sugar, and vanilla extract on high speed until stiff peaks form. Use this cream to decorate the tiramisu by spreading or piping swirls as desired.
- Serve and Store: Serve the tiramisu chilled. Store leftover portions covered in the refrigerator and consume within 24-48 hours for best texture and flavor.
Notes
- The amaretto liqueur is optional but adds a lovely almond flavor to the berry juice mixture.
- Ensure the egg yolk mixture reaches 160°F to safely cook the eggs for this no-bake dessert.
- Do not over-dip ladyfingers in the juice mixture to avoid sogginess; about 3 seconds is ideal.
- Using cold heavy cream for whipping helps achieve stiff peaks easier and better texture.
- Freeze-dried berry powder garnish is optional; it adds color and concentrated berry flavor.
- Best eaten within 2 days as the ladyfingers may become overly soft over time.
- Prep Time: 20 minutes (plus 2-3 hours resting time for berries and 3-4 hours chilling time)
