Description

Berry Tiramisu is a refreshing twist on the classic Italian dessert, incorporating a vibrant mix of fresh strawberries, blueberries, and raspberries soaked in a sweet berry juice and amaretto mixture, layered with luscious mascarpone cream and ladyfingers. Berry Mixture

  • 1 ½ pounds fresh strawberries (washed, hulled, and chopped)
  • 12 ounces fresh blueberries (washed and dried)
  • 12 ounces raspberries (washed and dried)

  • 4 tablespoons (60ml) amaretto liqueur (optional)
  • ¾ to 1 cup (180-240ml) water

Mascarpone Cream

  • 6 large egg yolks
  • 1 cup (207g) sugar
  • 1 ¼ cups (285g) mascarpone cheese
  • 1 ¾ cups (420ml) heavy whipping cream (cold)

Ladyfinger Layer

  • 1 package ladyfingers (17.5 ounce package)

Whipped Cream Topping

  • 1 ¼ cups (300ml) heavy whipping cream (cold)
  • ½ cup (58g) powdered sugar
  • 1 teaspoon vanilla extract

Optional Garnish

  • Freeze dried berries (for powder garnish)

Instructions

  1. Make Berries and Juice Mixture: Combine the berries and sugar in a large bowl, gently tossing to coat the fruit evenly with sugar. Cover and refrigerate for 2-3 hours to allow the berries to release their juices.
  2. Drain Juice: Drain the juice from the berries into a measuring cup. Ensure you have at least 1 cup of juice; if not, allow the berries to sit longer and extract more juice.
  3. Prepare Juice Mixture: Add the amaretto (if using) to the berry juice. Top up with water to reach 2 cups total of liquid. If no amaretto is used, simply use water to make 2 cups.
  4. Make Mascarpone Cream – Egg Yolks: In a double boiler or metal bowl placed over simmering water, whisk the egg yolks and sugar together. Continue whisking vigorously for about 5 minutes until the mixture thickens, becomes pale yellow, and reaches 160°F. Some graininess is acceptable.
  5. Cool Egg Mixture: Set the cooked egg yolk mixture aside to cool to just above room temperature.
  6. Whip Cream: While the eggs cool, whip 1 ¾ cups of cold heavy whipping cream on high speed until stiff peaks form.
  7. Combine Mascarpone Mixture: Gently fold the mascarpone cheese into the cooled egg yolk mixture until combined.
  8. Fold Whipped Cream: Fold the whipped cream into the mascarpone and egg mixture in two batches until smooth and fully combined. Set aside.
  9. Assemble Layers: Quickly dip each ladyfinger into the berry juice mixture for about 3 seconds and arrange in the bottom of a 9×13 inch pan, roughly three rows of eight ladyfingers each.
  10. Add First Berry Layer: Spread half of the mixed berries evenly over the ladyfingers.
  11. Add Mascarpone Layer: Spread half of the mascarpone filling evenly over the berries.
  12. Repeat Layers: Repeat the process by dipping another layer of ladyfingers, adding remaining mixed berries, then topping with the rest of the mascarpone filling.
  13. Chill Dessert: Refrigerate the assembled tiramisu for at least 3-4 hours or overnight to set and meld flavors.
  14. Prepare Garnish (Optional): If using freeze-dried berries, pulse them in a food processor to a fine powder and sprinkle immediately over the top to avoid clumping.
  15. Make Whipped Cream Topping: Whip the heavy whipping cream, powdered sugar, and vanilla extract on high speed until stiff peaks form. Use this cream to decorate the tiramisu by spreading or piping swirls as desired.
  16. Serve and Store: Serve the tiramisu chilled. Store leftover portions covered in the refrigerator and consume within 24-48 hours for best texture and flavor.
