- Simmer the milk and spices. In a medium pot over medium heat, combine the whole milk, cardamom pod, butternut squash puree, light brown sugar, and allspice berries. Bring the mixture to a gentle simmer, then remove from heat and let it steep for 5 minutes to infuse the flavors.
- Strain the mixture. After steeping, strain the milk mixture through a fine-mesh sieve into a small bowl to remove the cardamom pod, allspice berries, and any squash solids, leaving a smooth infused milk.
- Froth the milk. Using a milk frother or a small whisk, vigorously whisk the strained milk until it becomes frothy and light, enhancing the latte’s texture and presentation.
- Prepare the coffee base. Brew a fresh espresso shot or a strong coffee equivalent of 2 ounces, and pour it into your favorite mug. Stir in a pinch of kosher salt to balance the flavors and enhance sweetness.
