Instructions

  1. Caramelize the Sugar: In a medium Dutch oven or heavy-bottomed pot over medium-high heat, start by evenly sprinkling 1/4 cup of granulated sugar. Cook, stirring occasionally, until the sugar melts and turns a deep amber brown, approximately 1 minute. Gradually add the remaining sugar in 1/4 cup increments, allowing each portion to melt completely before adding the next. The sugar should reach a temperature of 275° to 280°F on an instant-read or candy thermometer.
  2. Add Butter: Remove the pot from heat. Whisk in the cold, cubed butter two pieces at a time, allowing each batch to fully melt into the caramel before adding the next. This creates a rich, glossy toffee base.
  3. Transfer Toffee to Molds: Carefully divide the hot toffee among the 30 compartments of the silicone ice cube molds, pouring about 1 tablespoon per compartment to evenly fill each space.
  4. Top with Chocolate Chips: Sprinkle approximately 2 teaspoons of mini semisweet chocolate chips over each toffee-filled compartment. Let sit for about 2 minutes so the chocolate chips melt from the heat of the toffee.
  5. Spread Melted Chocolate and Add Toppings: Using the back of a 1/2 teaspoon measuring spoon, spread the melted chocolate in an even layer over the toffee. Immediately top each bite with coarsely chopped toasted pecans and a pinch of flaky sea salt to enhance flavor complexity.
