Ingredients
Scale
Gnocchi and Vegetables
- 1 lb. store-bought gnocchi, uncooked
- 4 ears corn, shucked and kernels removed from cob (or 3 cups frozen corn, thawed)
- 2 cups cherry tomatoes
- 2 cloves garlic
Seasonings and Extras
- 1/4 cup unsalted butter, cut into cubes
- Kosher salt
- Red pepper flakes
- 3/4 cup dry white wine, such as Sauvignon Blanc
- 1/4 cup finely chopped fresh basil
- Grated Parmesan cheese, for serving
- Freshly ground black pepper
Instructions
- Preheat the grill: Prepare your grill by heating it to medium-high heat. Meanwhile, cut 4 sheets of heavy-duty foil, each about 12 inches long, to create individual cooking packets.
- Assemble the foil packs: Evenly divide the gnocchi, corn kernels, cherry tomatoes, butter cubes, and garlic cloves among the foil sheets. Season each pack with 1/4 teaspoon kosher salt and a pinch of red pepper flakes for a mild kick. Drizzle 3/4 cup of dry white wine evenly across the packets for moisture and flavor.
- Seal the packets: Fold the foil sheets crosswise over the ingredients to enclose them completely. Carefully roll and seal the top and bottom edges tightly to prevent steam and wine from escaping during cooking.
- Grill the packets: Place the sealed foil packets directly on the grill grates. Cook for about 15 to 20 minutes, until the cherry tomatoes have burst and the gnocchi is tender and cooked through.
- Finish and serve: Carefully open each foil packet and sprinkle the contents with freshly chopped basil, a generous grating of Parmesan cheese, and freshly ground black pepper to taste. Serve immediately while hot.
Notes
- You can substitute frozen corn if fresh is not available; just thaw before use.
- Make sure the foil packs are sealed tightly to trap steam for even cooking.
- For a non-alcoholic version, replace white wine with vegetable broth or water with a splash of lemon juice.
- Use heavy-duty aluminum foil to prevent tearing during grilling.
- Leftover foil packs can be stored in the refrigerator for up to 2 days and reheated in the oven or on the grill.
- Optional: Add sliced bell peppers or zucchini to the foil packs for extra veggies.
