Ingredients

  • 2 tbsp olive oil
  • 2 onions, finely diced
  • 2 garlic cloves, roughly chopped
  • 2 carrots, peeled and roughly diced
  • 2 celery stalks, roughly diced
  • 800 g minced (ground) beef
  • 2 tbsp tomato paste
  • 2 tbsp plain (all-purpose) flour
  • 500 ml beef stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 potatoes, cut into small cubes (roughly 1 cm/½ inch)
  • 1 tsp sea salt flakes, or to taste
  • ¼ tsp freshly cracked black pepper, or to taste
  • 150 g frozen peas
  • 1½ sheets frozen puff pastry, thawed and cut into rectangles
  • 1 egg, whisked
  • 1 tsp sesame seeds

Instructions

  1. Step 1: Heat the olive oil in a large, heavy-based pan over medium–high heat.
  2. Step 2: Add the onion, garlic, carrot, and celery. Cook for 4–5 minutes, stirring regularly, until softened.
  3. Step 3: Add the minced beef and cook, breaking it up with a wooden spoon or spatula, until it begins to brown, about 4–5 minutes.
  4. Step 4: Stir in the tomato paste, then add the plain flour and mix well to incorporate.
  5. Step 5: Pour in the beef stock, Worcestershire sauce, and add the dried thyme and cubed potatoes. Bring to a simmer, then reduce heat to low. Season with salt and pepper to taste.
  6. Step 6: Cover and cook for 30–35 minutes until the potatoes are tender. Stir occasionally. If the sauce starts sticking, add ½ cup (125 ml) water midway through cooking.
  7. Step 7: Turn off the heat and stir through the frozen peas; they will warm in the oven later.
  8. Step 8: Allow the filling to cool slightly.
  9. Step 9: Preheat the oven to 200°C (400°F) (180°C/350°F fan-forced).
  10. Step 10: Spoon the cooled filling into a 1-litre (1-quart) oven-safe baking dish.
  11. Step 11: Top the pie with the thawed puff pastry rectangles, slightly overlapping them.
  12. Step 12: Brush the pastry with the whisked egg and sprinkle with sesame seeds. Bake for 30–35 minutes until the pastry is crisp and golden.
  13. Step 13: Let the pie stand for 10 minutes before serving.

Tips & Variations

  • For extra flavor, add a splash of red wine to the beef mixture before simmering.
  • Swap frozen peas with fresh or use mixed vegetables like corn and green beans.
  • Use sweet potatoes instead of regular potatoes for a slightly sweeter twist.
  • If you prefer a thicker filling, reduce the beef stock slightly or add an extra tablespoon of flour.

Storage

Store leftover pie covered in the refrigerator for up to 3 days. Reheat in a 180°C (350°F) oven until warmed through to keep the pastry crisp. You can also freeze the baked pie for up to 2 months; thaw overnight in the refrigerator before reheating.

How to Serve

A golden-brown baked pie with a shiny, crispy crust topped with sesame seeds fills a round white ceramic dish with handles, the crust showing an uneven patchwork pattern of rectangular sections. One large scoop has been taken out from one side, revealing the inside packed with colorful chunks of cooked vegetables including green peas, orange carrots, and browned meat in a rich sauce. A black and white spoon rests inside the dish, holding a portion of the pie filling. Next to the main dish, a white plate with a piece of the pie and some filling is partly visible on a white marbled surface, with a soft, rusty orange cloth nearby. • 800 g minced (ground) beef
  • 2 tbsp tomato paste
  • 2 tbsp plain (all-purpose) flour
  • 500 ml beef stock
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 potatoes, cut into small cubes (roughly 1 cm/½ inch)
  • 1 tsp sea salt flakes, or to taste
  • ¼ tsp freshly cracked black pepper, or to taste
  • 150 g frozen peas

For the Pastry Topping

  • sheets frozen puff pastry, thawed and cut into rectangles
  • 1 egg, whisked
  • 1 tsp sesame seeds

Instructions

  1. Make the pie filling – Heat the olive oil in a large, heavy-based pan over medium–high heat to prepare for sautéing the vegetables.
  2. Cook the vegetables – Add the onions, garlic, carrots, and celery to the pan. Cook for 4–5 minutes, stirring regularly, until they are softened and fragrant.
  3. Brown the beef – Add the minced beef to the pan, breaking it up continuously with a wooden spoon or spatula. Cook for 4–5 minutes until the beef begins to brown evenly.
  4. Add tomato paste and flour – Stir in the tomato paste followed by the plain flour to coat the mixture and help thicken the sauce.
  5. Add liquids and seasoning – Pour in the beef stock, Worcestershire sauce, dried thyme, and add the cubed potatoes. Bring the mixture to a simmer, reduce heat to low, then season with salt and freshly cracked black pepper according to taste.
  6. Simmer the filling – Cover the pan and cook for 30–35 minutes or until the potatoes are tender. Stir occasionally and add ½ cup (125 ml) of water halfway through cooking if the sauce starts to stick to the bottom.
  7. Add peas – Turn off the heat and stir the frozen peas into the filling. They will warm through later in the oven.
  8. Cool the mixture – Allow the filling to cool slightly for easier handling during assembly.
  9. Preheat the oven – Set the oven to 200°C (400°F) or 180°C (350°F) fan-forced to prepare for baking the pie.
  10. Assemble the pie – Transfer the cooled filling into a 1 litre (1 quart) oven-safe baking dish, spreading it evenly.
  11. Top with pastry – Cover the filling with the thawed puff pastry rectangles, layering them to slightly overlap for full coverage.
  12. Glaze and bake – Brush the puff pastry with the whisked egg, sprinkle with sesame seeds, then bake for 30–35 minutes until the pastry is crisp and golden brown.
  13. Rest and serve – Allow the pie to stand for 10 minutes to set before serving, ensuring the filling is settled and easier to slice.

Notes

  • If the sauce begins sticking to the pan during simmering, add ½ cup (125 ml) of water to loosen it without losing flavor.
  • Using frozen peas adds color and sweetness; they are stirred in at the end so they remain fresh and tender after baking.
  • Let the filling cool slightly before assembling the pie to prevent the puff pastry from becoming soggy.
  • Brush the pastry with egg wash for a glossy, golden finish that’s visually appealing and enhances crispness.
  • Allow the pie to rest after baking to help all flavors meld and avoid hot filling spillage while serving.
