For the Filling
- 2 tbsp olive oil
- 2 onions, finely diced
- 2 garlic cloves, roughly chopped
- 2 carrots, peeled and roughly diced
- 2 celery stalks, roughly diced
- 800 g minced (ground) beef
- 2 tbsp tomato paste
- 2 tbsp plain (all-purpose) flour
- 500 ml beef stock
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 2 potatoes, cut into small cubes (roughly 1 cm/½ inch)
- 1 tsp sea salt flakes, or to taste
- ¼ tsp freshly cracked black pepper, or to taste
- 150 g frozen peas
For the Pastry Topping
- 1½ sheets frozen puff pastry, thawed and cut into rectangles
- 1 egg, whisked
- 1 tsp sesame seeds
Instructions
- Make the pie filling – Heat the olive oil in a large, heavy-based pan over medium–high heat to prepare for sautéing the vegetables.
- Cook the vegetables – Add the onions, garlic, carrots, and celery to the pan. Cook for 4–5 minutes, stirring regularly, until they are softened and fragrant.
- Brown the beef – Add the minced beef to the pan, breaking it up continuously with a wooden spoon or spatula. Cook for 4–5 minutes until the beef begins to brown evenly.
- Add tomato paste and flour – Stir in the tomato paste followed by the plain flour to coat the mixture and help thicken the sauce.
- Add liquids and seasoning – Pour in the beef stock, Worcestershire sauce, dried thyme, and add the cubed potatoes. Bring the mixture to a simmer, reduce heat to low, then season with salt and freshly cracked black pepper according to taste.
- Simmer the filling – Cover the pan and cook for 30–35 minutes or until the potatoes are tender. Stir occasionally and add ½ cup (125 ml) of water halfway through cooking if the sauce starts to stick to the bottom.
- Add peas – Turn off the heat and stir the frozen peas into the filling. They will warm through later in the oven.
- Cool the mixture – Allow the filling to cool slightly for easier handling during assembly.
- Preheat the oven – Set the oven to 200°C (400°F) or 180°C (350°F) fan-forced to prepare for baking the pie.
- Assemble the pie – Transfer the cooled filling into a 1 litre (1 quart) oven-safe baking dish, spreading it evenly.
- Top with pastry – Cover the filling with the thawed puff pastry rectangles, layering them to slightly overlap for full coverage.
- Glaze and bake – Brush the puff pastry with the whisked egg, sprinkle with sesame seeds, then bake for 30–35 minutes until the pastry is crisp and golden brown.
- Rest and serve – Allow the pie to stand for 10 minutes to set before serving, ensuring the filling is settled and easier to slice.
Notes
- If the sauce begins sticking to the pan during simmering, add ½ cup (125 ml) of water to loosen it without losing flavor.
- Using frozen peas adds color and sweetness; they are stirred in at the end so they remain fresh and tender after baking.
- Let the filling cool slightly before assembling the pie to prevent the puff pastry from becoming soggy.
- Brush the pastry with egg wash for a glossy, golden finish that’s visually appealing and enhances crispness.
