  • Diet: Low Fat

Description

A refreshing and sweet fruit salad featuring a mix of fresh and canned fruits combined with mini marshmallows and a creamy blend of whipped topping and Greek yogurt, perfect for a light dessert or side dish.

Ingredients

Scale

Fruits

  • 1 can mandarin oranges (15 ounces)
  • 2 cups pineapple tidbits or chunks (fresh or canned)
  • 2 cups strawberries (sliced)
  • 1 cup red grapes (halved)
  • 1 cup green grapes (halved)

Other Ingredients

  • 2 cups mini marshmallows
  • 1 tub frozen whipped topping (8 ounces, thawed)
  • 3/4 cup nonfat plain Greek yogurt

Instructions

  1. Drain fruit: Drain the mandarin oranges and pineapple chunks thoroughly if you are using canned fruit to avoid excess liquid making the salad watery.
  2. Mix ingredients: In a large bowl, gently mix all the drained fruits with the mini marshmallows to evenly distribute the sweetness and texture.
  3. Combine yogurt mixture: In a separate bowl, combine the thawed frozen whipped topping with the nonfat plain Greek yogurt until smooth and well blended.
  4. Fold mixture: Carefully fold the yogurt and whipped topping mixture into the fruit and marshmallow mixture to preserve the fruit’s shape and to create a light, fluffy texture.
  5. Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld and the salad to chill before serving.

Notes

  • Use fresh fruit whenever possible for the best flavor and texture.
  • Adjust the amount of marshmallows for desired sweetness.
  • For a lighter version, substitute whipped topping with additional Greek yogurt.
  • This salad can be prepared a few hours in advance and stored in the refrigerator.
  • Gently folding the yogurt mixture helps keep the fruit intact instead of breaking it down.
