Filling

  • 4 large eggs (at room temperature)
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 2/3 cup lemon juice (freshly squeezed, juice of about 4 lemons)
  • 1/2 cup gluten-free all-purpose flour blend

Instructions

  1. Preheat oven: Preheat your oven to 325°F (163°C). Grease an 8-inch square pan and line it with parchment paper, leaving an overhang on the sides for easy removal later.
  2. Prepare crust mixture: In a bowl, whisk together gluten-free flour, confectioners’ sugar, salt, and lemon zest. Stir in the melted butter, adding more if necessary until the mixture holds together and can be evenly pressed into the pan.
  3. Bake crust: Press the crust mixture firmly into the prepared pan. Bake in the preheated oven for 15-20 minutes until it firms up and just begins to set. Remove from oven and allow to cool slightly.
  4. Make lemon filling: In a separate bowl, whisk the eggs, granulated sugar, baking powder, lemon juice, and gluten-free flour until smooth and fully combined.
  5. Assemble bars: Pour the lemon filling evenly over the warm crust to ensure even cooking and a smooth top.
  6. Bake lemon bars: Return the pan to the oven and bake for 22-27 minutes until the filling is just set but with a slight jiggle in the center when the pan is gently moved.
