Green Grape Sorbet
- 1 lb. cotton candy or green muscat grapes (about 3 1/2 cups)
- 2 tbsp. light agave syrup (or more, to taste)
- 1/8 tsp. fresh lemon juice
- 1/4 cup water
Red Grape Sorbet
- 1 lb. red raisin grapes (about 3 1/2 cups)
- 1/3 cup (100% juice) concord grape concentrate, thawed
Instructions
- Prepare the grapes: Wash and rinse the green muscat and red raisin grapes thoroughly, then remove all stems. Divide the grapes onto two separate parchment-lined baking sheets — one for green grapes and one for red grapes — ensuring the trays will fit in your freezer. Freeze the grapes for at least 6 hours, ideally overnight, until completely frozen.
- Process green grapes: Transfer the frozen green grapes to a food processor, keeping the red grapes frozen separately. Add 2 tablespoons of light agave syrup and 1/4 cup of water to the processor. Pulse the mixture for about 30 seconds until it becomes fairly smooth. Scrape down the sides of the bowl, taste the mixture, and add more agave syrup if desired. Add 1/8 teaspoon of fresh lemon juice and pulse for an additional 30 seconds until smooth. Transfer this green grape sorbet base to a medium bowl.
- Process red grapes: Clean and wipe out the food processor bowl. Add the frozen red grapes along with the thawed 1/3 cup of concord grape concentrate. Pulse for about 30 seconds until mostly smooth. Scrape the sides of the bowl and continue pulsing for another 30 seconds until the texture is smooth.
- Serve or freeze: You can enjoy the sorbet immediately for a softer texture. For a firmer, more traditional sorbet consistency, divide each sorbet mixture between two freezer-safe containers and freeze for at least 3 more hours before scooping.
- Make ahead tips: This sorbet can be made up to 30 days in advance. Keep frozen in airtight containers until ready to serve.
