A round shallow pan filled with a creamy layered dip, the base layer is dark green cooked spinach mixed with melted cheese creating a leafy uneven texture, topped with a thick layer of bubbly, melted white cheese scattered unevenly, with some golden browned spots. A golden spoon rests on the right side inside the pan. Below the pan is a circle of light brown round crackers arranged in a fan shape on top of a white cloth with blue thin stripes. To the right side of the pan, there are small bunches of fresh green broccolini. The entire setting is placed on a white marbled texture. photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 8 oz low-fat smooth cottage cheese
  • 1 cup low-fat sour cream
  • 10 oz baby spinach
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup Parmesan cheese, grated
  • 1 1/2 cups feta cheese
  • 2 tablespoons oregano

Instructions

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: Bring a large pot of water to a boil. Add the baby spinach and blanch for 1 to 2 minutes, until bright green and wilted. Strain and rinse under cold water to stop the cooking.
  3. Step 3: Once cool enough to handle, squeeze out as much excess water from the spinach as possible, then shred it with a knife.
  4. Step 4: In a bowl, combine the cottage cheese, sour cream, shredded spinach, minced garlic, sea salt, black pepper, oregano, half of the Parmesan, and half of the feta cheese. Mix until well blended.
  5. Step 5: Transfer the mixture to an oven-proof dish. Sprinkle the remaining feta and Parmesan cheese evenly over the top.
  6. Step 6: Bake for 20 to 25 minutes until the dip is heated through and cheeses are melted.
  7. Step 7: For a golden, bubbly top, switch the oven to broil on high and broil the dip for a few minutes until the cheese browns to your liking. Watch carefully to prevent burning.

Tips & Variations

  • Use fresh spinach for best flavor, but frozen and thawed spinach works in a pinch—just be sure to squeeze out all extra moisture.
  • Add a squeeze of lemon juice or a pinch of red pepper flakes for a bright, spicy twist.
  • Try substituting part of the feta with goat cheese for a creamier texture.
  • Serve with sliced baguette, pita chips, or an assortment of fresh vegetables like carrot sticks and bell pepper strips.

Storage

Store any leftover dip in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven until warmed through. For best results, avoid reheating under the broiler to prevent over-browning.

How to Serve

A close-up shows a gray round dish filled with a creamy, bubbly dip that has two main layers: a top layer of melted white cheese mixed with dark green leafy vegetable bits, and a more liquid creamy base beneath, steaming gently. A woman's hand is holding a cracker topped thickly with the same creamy dip, showing gooey layers of white cheese and dark green leaves. A golden spoon is partially buried in the dip inside the dish.
