  • 8 oz low-fat smooth cottage cheese
  • 1 cup low-fat sour cream
  • 1 teaspoon garlic (minced)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons oregano

  • 10 oz baby spinach

  • 1/2 cup Parmesan cheese (grated)
  • 1 1/2 cups feta cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the dip.
  2. Blanch Spinach: Bring a large pot of water to a boil over high heat. Add the baby spinach and blanch for 1 to 2 minutes until the spinach turns bright green and begins to wilt. Immediately strain and rinse under cold water to halt the cooking process.
  3. Squeeze Spinach: Once cool enough to handle, squeeze out as much excess water as possible from the spinach. Shred the spinach finely with a knife to ensure it mixes well into the dip.
  4. Mix Ingredients: In a mixing bowl, combine the low-fat cottage cheese, sour cream, minced garlic, sea salt, black pepper, oregano, and shredded spinach. Add half of the Parmesan and half of the feta cheese. Mix thoroughly until well blended.
  5. Bake Dip: Transfer the mixture into an oven-proof dish. Sprinkle the remaining Parmesan and feta cheeses evenly over the top. Bake in the preheated oven for 20 to 25 minutes until the dip is hot and the cheeses have melted.
  6. Broil Top: Switch the oven to broil on high and broil the dip for a few minutes until the top is golden brown and bubbly, watching carefully to avoid burning. Remove from oven and let cool slightly before serving.

Notes

  • Make sure to squeeze out as much water as possible from the spinach to prevent the dip from becoming watery.
  • You can substitute fresh spinach with frozen spinach if fresh is unavailable; be sure to thaw and squeeze dry thoroughly.
  • Serve warm with whole grain crackers, sliced baguette, or fresh vegetable sticks.
  • For extra flavor, add a pinch of crushed red pepper flakes or a dash of smoked paprika.
  • This dip can be prepared a day ahead and baked right before serving for convenience.
