Instructions
- Roast peppers: Preheat your oven to 400°F (200°C). Halve the red bell peppers and remove the seeds. Place them cut-side down on a baking sheet and roast for 20 to 30 minutes, until the skins blister and darken, developing a smoky flavor.
- Steam and peel peppers: Remove the roasted peppers from the oven and cover them with foil or an inverted bowl to trap steam for 10 minutes. This loosens the skins, making them easier to peel. Then, peel off the skins carefully—running them under cold water can help, but remember to pat them dry thoroughly afterward.
- Blend dip ingredients: In a food processor, combine the peeled roasted peppers, crumbled feta cheese, extra-virgin olive oil, lemon juice, dried chili flakes, garlic clove, salt, and black pepper. Blend the mixture until smooth and creamy. Taste and adjust the seasoning with additional salt, pepper, or chili flakes as preferred.
