Ingredients
Scale
Cookie Dough
- 1/2 cup butter (softened)
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 tbsp vanilla extract
- 1 egg (at room temperature)
- 1 & 1/4 cup old fashioned whole rolled oats
- 1 cup all-purpose flour
- 1/4 tsp cinnamon
- pinch of nutmeg
- 1/2 tsp baking soda
- 1/4 tsp salt
Vanilla Glaze
- 3/4 cup powdered sugar
- 1.5 tbsp milk
- 1/4 tsp vanilla extract
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking.
- Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until well combined and fluffy. Then, add the egg and vanilla extract, mixing until the mixture is light and airy.
- Combine Dry Ingredients: In the same bowl, gradually add the flour, rolled oats, cinnamon, nutmeg, baking soda, and salt. Scrape the sides of the bowl as needed to ensure all ingredients are fully incorporated into the cookie dough.
- Shape and Bake Cookies: Using a large cookie scoop, portion out 8 equally sized balls of dough onto the prepared baking sheet. Gently press each ball down to about 1 inch thickness. Bake in the preheated oven for 10 minutes, being careful not to overbake to maintain soft, gooey centers.
- Cool the Cookies: After baking, allow the cookies to cool on the baking sheet for 20 minutes to set properly. Then transfer them to a wire cooling rack to cool completely.
- Prepare the Vanilla Glaze: In a medium bowl, whisk together the powdered sugar, 1 tablespoon of milk, and vanilla extract until smooth. Adjust the consistency by adding additional milk—1 teaspoon at a time—if the glaze is too thick, ensuring it’s thick enough to coat but thin enough for dipping.
- Ice the Cookies: Once the cookies are fully cooled, dip the tops into the vanilla glaze. Place the glazed cookies back on the cooling rack and allow the icing to set completely before serving.
Notes
- Do not overbake the cookies; they should remain soft and slightly gooey in the center.
- Use room temperature egg for better mixing and texture.
- Adjust glaze thickness gradually to get the perfect coating consistency.
- Store cookies in an airtight container at room temperature for up to 3 days.
- For dairy-free version, substitute butter and milk with plant-based alternatives.
