  • Yield: 6 servings 1x

Description

Indulge in a delightful twist on classic French toast with this Jelly Donut French Toast recipe. Thick slices of day-old brioche are carefully filled with sweet raspberry jam, then soaked in a rich mixture of milk, eggs, and vanilla before being pan-fried to golden perfection. Finished with a dusting of powdered sugar, this breakfast treat offers a perfect balance of fluffy, sweet, and buttery flavors reminiscent of your favorite jelly donuts.

Ingredients

Scale

Bread and Filling

  • 1 loaf brioche, cut into 6 thick slices, preferably day old
  • 1 (13-oz.) jar raspberry jam

Batter

  • 1 cup whole milk
  • 2 large eggs
  • 1 tsp pure vanilla extract

Cooking and Garnish

  • 3 tbsp butter, plus more as needed
  • Powdered sugar, for serving

Instructions

  1. Create Bread Pockets: In the bottom of each thick slice of brioche, carefully cut a 2-inch wide slit to form a pocket, taking care not to cut through the entire slice.
  2. Fill with Jam: Fill a pastry bag or a resealable plastic bag with raspberry jam. Pipe the jam generously into each pocket of the bread slices, ensuring the jam is well-contained inside.
  3. Prepare Egg Mixture: In a large shallow bowl, whisk together the whole milk, eggs, and pure vanilla extract until fully combined and smooth.
  4. Dip the Bread: Submerge each jam-filled slice of brioche into the egg mixture, turning gently to coat all sides thoroughly without breaking the bread.
  5. Cook the French Toast: Heat a medium skillet over medium heat and melt 3 tablespoons of butter. Working in batches, add each dipped bread slice to the skillet, cooking for 2 to 3 minutes per side or until each side is golden brown. Add additional butter as necessary between batches.
  6. Serve: Once cooked, transfer the French toast to plates. Dust generously with powdered sugar and serve immediately while warm and gooey.

Notes

  • Using day-old brioche helps the bread hold up better and absorb the egg mixture without becoming too soggy.
  • If you don’t have a pastry bag, simply spoon the jam carefully into the bread pockets.
  • Adjust the cooking time to ensure the French toast is golden but not burnt.
  • Serve with fresh berries or a drizzle of maple syrup for extra flavor.
  • For a dairy-free variation, substitute whole milk and butter with plant-based alternatives.
