Ingredients

  • 10 tbsp (140g) unsalted butter (melted)
  • 1 cup (207g) granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3/4 cup (98g) all-purpose flour
  • 6 tbsp (43g) natural unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 24 ounces (678g) cream cheese (room temperature)
  • 1 cup (207g) granulated sugar
  • 3 tbsp (24g) all-purpose flour
  • 1 cup (230g) sour cream (room temperature)
  • 2 tbsp instant coffee granules
  • 2 tbsp (30ml) Kahlua (warm)
  • 2 tsp vanilla extract
  • 3 large eggs (room temperature)
  • 8 oz (227g) semi-sweet chocolate chips
  • 5 tbsp (75ml) Kahlua
  • 5 tbsp (75ml) heavy whipping cream
  • 1/2 cup (120ml) heavy whipping cream
  • 2 tbsp (30ml) Kahlua
  • 6 tbsp (43g) powdered sugar

Instructions

  1. Step 1: Preheat the oven to 350°F (176°C). Line a 9-inch (23cm) springform pan with parchment paper on the bottom and grease the sides thoroughly.
  2. Step 2: In a medium bowl, combine melted butter, 1 cup sugar, and 1 tsp vanilla extract. Add 2 eggs and mix until fully combined.
  3. Step 3: In another medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until smooth.
  4. Step 4: Pour the brownie batter into the prepared pan and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted comes out with a few moist crumbs. Remove from oven and reduce temperature to 300°F (148°C).
  5. Step 5: To prepare the cheesecake filling, beat cream cheese, 1 cup sugar, and 3 tbsp flour on low speed until smooth and fully combined, scraping the bowl sides as needed.
  6. Step 6: Add sour cream and mix on low until incorporated. In a small bowl, dissolve instant coffee granules in warm Kahlua. Add this mixture along with 2 tsp vanilla extract to the cream cheese mixture and mix well.
  7. Step 7: Add eggs one at a time, mixing slowly after each addition to avoid overbeating. Scrape the bowl sides to ensure everything is combined evenly.
  8. Step 8: Pour the cheesecake batter evenly over the baked brownie layer in the springform pan.
  9. Step 9: Wrap the outside of the pan with aluminum foil. Place the pan inside a larger baking pan and pour warm water into the larger pan to come about halfway up the sides of the springform pan (avoiding water above the foil).
  10. Step 10: Bake for 1 hour and 15 minutes. The center should be set but still slightly jiggly. Turn off the oven, close the door, and let the cheesecake rest inside for 30 minutes.
  11. Step 11: Crack the oven door open and allow the cheesecake to cool slowly for another 30 minutes. This helps prevent cracks.
  12. Step 12: Remove the cheesecake from the oven and water bath. Refrigerate uncovered until firm, about 5-6 hours or overnight. Once chilled, remove from the springform pan.
  13. Step 13: To make the ganache, place chocolate chips in a heatproof bowl. Heat heavy cream and 5 tbsp Kahlua just until it starts to boil, then pour over the chocolate. Let sit for 2-3 minutes, then whisk until smooth. Spread ganache evenly over the cheesecake.
  14. Step 14: For the whipped cream, combine 1/2 cup heavy cream, 2 tbsp Kahlua, and powdered sugar in a large bowl. Whip on high speed until stiff peaks form.
  15. Step 15: Pipe or spread whipped cream over the ganache-covered cheesecake. Optionally, dust with cocoa powder. Refrigerate until ready to serve.

Tips & Variations

  • Use room temperature eggs and cream cheese to ensure a smooth cheesecake batter without lumps.
  • Wrap the springform pan tightly with foil to prevent water from leaking into the cheesecake during the water bath.
  • For a stronger coffee flavor, add an extra tablespoon of instant coffee dissolved in the Kahlua mixture.
  • Substitute Kahlua with another coffee liqueur or omit for a non-alcoholic version, replacing with additional coffee.
  • Let the cheesecake cool gradually in the oven to help prevent cracks on the surface.

Storage

Store the cheesecake covered in the refrigerator for up to 5 days. Keep it well wrapped or in an airtight container to prevent it from absorbing other fridge odors. When ready to serve, you can let it sit at room temperature for 15-20 minutes for a softer texture. Avoid freezing as the texture may change.

How to Serve

A three-layer round dessert sits on a white plate with a slightly decorative edge; the bottom layer is dark brown and crumbly, resembling a chocolate crust, the middle layer is smooth and light beige, like a creamy filling, and the top layer is a shiny dark chocolate ganache sprinkled with fine brown powder. Around the edge of the top layer is a ring of light beige whipped cream swirled in a decorative pattern, also dusted lightly with brown powder. The whole setup is placed on a white marbled surface. FAQs

Can I use regular brewed coffee instead of instant coffee granules?

Instant coffee granules dissolve easily and provide a concentrated flavor, which is ideal for this recipe. You can substitute with a strong brewed coffee, but reduce the liquid in the filling slightly to maintain the right texture.

How do I prevent my cheesecake from cracking?

Mix the batter on low speed to reduce air bubbles, bake in a water bath to provide gentle heat, and allow the cheesecake to cool slowly in the oven with the door slightly cracked. These steps help prevent cracks and keep the cheesecake smooth.
